SPICY GINGER DAHL

MAKES 2 TO 3 SERVINGS

About 2 tablespoons extra-virgin olive oil

1 to 2 cloves fresh garlic, finely minced

3 to 4 slices fresh ginger, finely minced

½ yellow onion, diced

Sea salt

Generous pinch red pepper flakes

Generous pinch cumin

Generous pinch coriander

½ cup mung beans, sorted and rinsed well

2 cups spring or filtered water

2 to 3 sprigs fresh flat-leaf parsley, finely

minced

4 to 6 pita breads, cut into wedges, toasted
