SPICY GINGER DAHL
Beans and spices are like love and passion. On their own, theyâre okay, but together, they ignite. The calming and strengthening character of the protein in the beans becomes warm and powerful when enhanced by the exotic heat of spices.
MAKES 2 TO 3 SERVINGS
About 2 tablespoons extra-virgin olive oil
1 to 2 cloves fresh garlic, finely minced
3 to 4 slices fresh ginger, finely minced
½ yellow onion, diced
Sea salt
Generous pinch red pepper flakes
Generous pinch cumin
Generous pinch coriander
½ cup mung beans, sorted and rinsed well
2 cups spring or filtered water
2 to 3 sprigs fresh flat-leaf parsley, finely
minced
4 to 6 pita breads, cut into wedges, toasted
